Pav Bhaji Recipe (Mumbai Style)

Ingredients

For Bhaji (Vegetable Mash):

  • 2 tbsp oil + 1 tbsp butter
  • 1 tsp cumin seeds
  • 1 medium onion (finely chopped)
  • 1 green chili (optional, finely chopped)
  • 1 tbsp ginger-garlic paste
  • 2 medium tomatoes (finely chopped)
  • 1 capsicum (finely chopped)
  • 2 potatoes (boiled and mashed)
  • 1/2 cup green peas (boiled)
  • 1/2 cup cauliflower (boiled & mashed,
    optional but traditional)
  • 2 tsp Saptrishi Pav Bhaji Masala (or
    regular pav bhaji masala)
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder (adjust to taste)
  • Salt to taste
  • 1/2 to 1 cup water (adjust consistency)
  • 1 tbsp butter (for finishing)
  • Fresh coriander leaves (chopped)
  • Lemon wedges for serving

For Pav (Bread Rolls):

  • 6 pav buns
  • 2–3 tbsp butter
  • A pinch of pav bhaji masala for toasting (optional)

1. Prepare the Bhaji:

  • Heat oil and butter in a pan. Add cumin seeds.
  • Sauté onions until golden, then add green chili and ginger-garlic paste.
  • Add tomatoes and cook till mushy.
  • Add capsicum and cook for 2–3 minutes.
  • Add mashed potatoes, peas, and cauliflower. Mix well.
  • Sprinkle Saptrishi Pav Bhaji Masala, turmeric, red chili powder, and salt.
  • Mash everything using a potato masher or back of a ladle.
  • Add water to adjust consistency. Simmer for 5–7 minutes, stirring occasionally.
  • Finish with a spoon of butter and garnish with coriander.

2. Toast the Pav:

  • Slice pav buns. On a hot tawa, melt butter, sprinkle some pav bhaji masala (optional), and toast buns until crisp and golden.

🥄 Serve Hot:

Serve bhaji with toasted pav, a dollop of butter, chopped onions, and lemon wedges.
