Ingredients
1. Prepare the Bhaji:
- Heat oil and butter in a pan. Add cumin seeds.
- Sauté onions until golden, then add green chili and ginger-garlic paste.
- Add tomatoes and cook till mushy.
- Add capsicum and cook for 2–3 minutes.
- Add mashed potatoes, peas, and cauliflower. Mix well.
- Sprinkle Saptrishi Pav Bhaji Masala, turmeric, red chili powder, and salt.
- Mash everything using a potato masher or back of a ladle.
- Add water to adjust consistency. Simmer for 5–7 minutes, stirring occasionally.
- Finish with a spoon of butter and garnish with coriander.
2. Toast the Pav:

Slice pav buns. On a hot tawa, melt butter, sprinkle some pav bhaji masala (optional), and toast buns until crisp and golden.

Serve bhaji with toasted pav, a dollop of butter, chopped onions, and lemon wedges.
