Vegetable Dalia Recipe

Ingredients

Ingredients:

  • 1 cup Saptrishi broken wheat (dalia)
  • 1 tablespoon oil or ghee
  • 1 medium onion (finely chopped)
  • 1 small carrot (grated or finely chopped)
  • 1/2 cup peas (fresh or frozen)
  • 1/4 cup beans (chopped, optional)
  • 1 tomato (chopped)
  • 1-2 green chilies (slit)
  • 1-inch piece of ginger (grated or finely chopped)
  • 1/4 teaspoon Saptrishi turmeric powder
  • 1 teaspoon Saptrishi cumin seeds
  • 1/2 teaspoon Saptrishi mustard seeds
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon Saptrishi coriander powder
  • Salt to taste
  • Fresh coriander leaves (for garnish)
  • 4 cups water (or as needed)
  • Lemon wedges (optional, for serving)

How to Make Vegetable Dalia:

  1. Roast the Dalia (Broken Wheat):
    • In a pan, dry roast the broken wheat (dalia) on medium heat for about 3-4 minutes until it becomes slightly aromatic. Set it aside.
  2. Prepare the Vegetables:
    • In the same pan, heat oil or ghee. Add cumin seeds and mustard seeds. Let them splutter.
    • Add finely chopped onions, grated ginger, and green chilies. Sauté for a few minutes until the onions turn golden brown.
  3. Cook the Vegetables:
    • Add the chopped carrots, peas, and beans (if using). Stir and cook for 2-3 minutes.
    • Add chopped tomatoes, turmeric powder, cumin powder, and coriander powder. Stir well and cook until the tomatoes soften.
  4. Add the Dalia:
    • Add the roasted broken wheat (dalia) to the pan and mix it with the vegetables and spices.
  5. Cook the Dalia:
    • Add 4 cups of water (or more if you prefer a softer consistency). Add salt to taste.
    • Stir everything well and bring it to a boil. Once it starts boiling, reduce the heat, cover the pan, and let it cook on low heat for 10-12 minutes, or until the dalia is soft and fully cooked. Stir occasionally to avoid it sticking to the pan.
  6. Garnish and Serve:
    • Once the vegetable dalia is cooked and the water is absorbed, garnish with fresh coriander leaves.
    • Serve hot with a wedge of lemon on the side for a tangy twist.
